Nian's Cooking Diary

“Chicken Biryani” is very popular and common recipe in our Bengali tradition. Not only in any occasion but also available “Chicken Biryani” like as street food for lunch or dinner. Today I prepare this very common chicken biryani. Hope this video will help for beginners or bachelors or new married couples. Anyone can cook this chicken biryani by following this video. INGREDIENTS:

1.  6 piece chicken
2.  3 cup chinigura rice / chaal
3.  2 cup liquid milk
4.  10-15 green chili
5.  15-20 pieces washed peeled almond nut
6.  1/4th cup ghee
7.  1/3rd cup oil
8.  For grind take ½ tsp shah zira, 2 pieces of mace (Joyotree), 2 black cardamom and ½ portion nutmeg (joyfol)
9.  ½ cup yogurt
10.  Salt depends on taste
11.  2 tbsp garlic paste
12.  4 tbsp ginger paste
13.  1 tsp red chili powder
14.  4 tsp sugar
15.  3 bay leaves, 6 cardamom, 5-6 piece cloves, 5-6 piece cinnamon and 12-15 piece black pepper
16.  2 cup chopped onion
17.  1 tsp keora water
18.  Water added double amount of rice
19.  ½ cup fried onion or piaz bereshta
20.  some raisins
21.  4-5 piece aloo Bukhara

PROCEDURE:

1.  Take 15-20 pieces washed peeled nut. Here I use Almond nut, you can choose any kind of nuts. Also take 7-8 piece green chilis. Take nuts and green chili in a blender jar. We make this a smooth paste. So add some water and close the jar to make finely smooth paste.

2.  Take some dry spices. Here I take only for this biryani ½ tsp shah zira, 2 pieces of mace (Joyotree), 2 black cardamom and ½ portion nutmeg (joyfol). Take all in a spice grinder. Cover jar and grind finely.

3.  Take 6 pieces roast size chicken. Slightly cut from joint of leg piece. Now add ½ cup yogurt, 1 tsp garlic paste, 1 tsp ginger paste, 1 tsp salt and 1 tsp red chili powder with chicken. Mix all properly. Now you can keep this to marinate for half an hour or can cook instantly.

4.  Now heat 2 tbsp ghee and 1/3rd cup oil in a cooking pan. Take some garam masala, like 3 bay leaves, 6 cardamom, 5-6 piece cloves, 5-6 piece cinnamon and 12-15 piece black pepper. Add with oil and fry for few seconds.

5.  Add 2 cup chopped onion. Stir and mix will oil. Fry onion till light golden colour. Add marinated chicken with oil. Stir and mix chicken with onion. Also add rest of marinated masala, 2 tbsp ginger paste, 1 tbsp garlic paste and 1 tsp salt. Mix and flip all chicken. Add some of water and mix chicken.

6.  Now add chili and nut paste, wash jar with some water and add, add grinded spices with chicken. Mix all properly with chicken. Here I keep flame in medium. Now cover pan for 15-20 minutes.

7.  20 minutes later, open the lid. Stir chicken and flip all. Chicken sauté nicely, oil separate from chicken. Now add 1 cup milk. Here I didn’t use water, cook chicken with this milk. Mix all perfectly. Then cover pan in medium flame for 15 minutes. 

8.  15 minutes later open the lid. Stir chicken. Add 2 tsp sugar and 1 tsp keora water. Mix all. Chicken almost sodden properly. If your chicken stay hard in this stage, can add some water and tender chicken. Water soaked from chicken. Take a plate, keep chicken pieces in a plate, also take some grave.

9.  Now take washed and water drained chinigura pulao er chaal. I take 3 cup chaal. You can prepare this biryani with “Bashmati” chaal. Stir rice properly. Add 1 tbsp garlic paste, 1 tbsp ginger paste and 1 tbsp salt. In high flame, stir and mix all nicely for 2-3 minute.

10.  Now add 5 cup hot water, mix water with rice. Also add 1 cup liquid milk. Here I take 3 cup chaal, so liquid add 6 cup. Mix all nicely. In high flame boil, chaal. Add 10-12 piece green chili and 1 tsp sugar. Mix again. Boil 4-5 minute and wait rice water raised in same level.

11.  Almost 5 minutes later, rice is raised in water level. Stir rice. Now cover pan in low flame for 15 minutes.

12.  15 minutes later, open the lid. Stir and flip rice very carefully. Take ½ portion rice in a plate. And another ½  portion place like video in pan. Now place chicken pieces gently, also spread gravy. Spread some “fried onion” or “piaz beresta”. Now Spread rest of pulao rice gently and cover all chicken pieces. In this time keep flame off. Now add 2 tbsp ghee, some raisins, 4-5 piece “aloo Bukhara”, some beresta and 1 tsp lemon juice. Now keep flame in low and keep this pan in “DAM” for 10 minutes.

13.  10 minutes later, open the lid. Stir gently chicken biryani. Nice aroma spread all over. Now serve this delicious chicken biryani and enjoy with family and friends.

Take moong or mug daal. Firstly I roast this moong daal. Add moong daal in a pan on stove. Keep flame in medium. Stir daal continuously. Fry daal till its colour change from yellow to pink. And a nice aroma will spread all over. Colour change done. Now wash daal with enough water. 2. Heat oil in a cooking pan. Take bay leaves, cinnamon, cardamom and cloves. Add in hot oil and fry for a few seconds. Now add chopped onion. Stir and mix onion. Fry onion till light golden colour. 3. Now add washed pulao rice, moong daal, salt and ginger garlic paste. Stir and mix all. In medium flame, fry rice till rice getting white colour. And a nice aroma will spread everywhere. 4. Then add 5 cup hot water. Rice 2 cup with daal ½ cup, so water 5 cup. Water is needed double than rice for pulao, khichuri, tehari or Biryani. Add also green chili. Stir and mix with rice. Cover pan for 3-4 minute in high flame and boil properly. 5. After properly boiling, open the lid. Stir rice and daal. Check amount of salt, if needed add more. Rice almost risen level of water. Cover pan in low flame for 20 minutes. If you want, you can put this pan on a hot tawa and keep into “DOM”. 6. 20 minutes later, open the lid. Before stirring, add ghee. Then stir and mix nicely. Rice and daal tender perfectly. Put off the flame and cover pan for 5 minutes to spread flavor of ghee. 7. Serve this yummy and gorgeous moong daler khichuri in a bowl. Very tasty khichuri, you can enjoy with any kind of meat or egg bhaji. Ramadan is knocking at the door. In Iftar menu we prepare a various kinds of junk foods. Potato chop, egg chop or egg potato chop is one of them very common item. Today I make egg potato chop or egg potato kebab with some extra spicy ingredients. This spicy egg potato chop taste was amazing and yummy. Hope you will like this video and please share this recipe with your family and friends.

INGREDIENTS:

1.  5 piece boiled potato
2.  2 boiled egg
3.  ½ cup fried onion
4.  ½ tsp red chili powder, ½ tsp turmeric powder, ½ tsp cumin powder, ½ tsp black pepper powder, ½ tsp coriander powder, ½ tsp garam masala powder
5.  1 tsp ginger garlic paste
6.  1 tsp salt
7.  3-4 piece chopped green chili
8.  Some chopped coriander leaves
9.  1 egg
10.  1 cup bread crumb
11.  Oil for fry

PROCEDURE:
1.  Take a bowl, also take a grater. Grate boiled potatoes. Then also grate eggs. Now add fried onions, all kind of dry spices, chopped green chili, ginger garlic paste, salt and chopped coriander leaves. Mix all properly. Potato egg dough is ready to make chop or potato kebab.

2.  Take some potato dough, Shape like pakora or kebab and place in a plate.

3.  Here I take 1 beaten egg and 1 cup bread crumb to coat egg potato kebab. Now first brush with beaten egg and then coat with bread crumb nicely. Place potato egg kabab in a plate. Same way, coat all egg potato pakora. Egg Potato kebabs are ready to deep fry.

4.  Heat oil in a frying pan. Take a egg Potato kabab and pour in hot oil. Fry potato chop in medium flame. 4-5 minutes later, flip all egg potato kebabs. Fry another sides for 4-5 minutes. That is, fry both sides of egg potato chop till golden brown colour.

5.  Then strain egg potato chop from oil with a sieve. Transfer egg potato chop or egg potato pakora in a plate with kitchen tissue to absorb extra oil. Now enjoy this egg potato chop with any kind of ketchup or sauce.

Chicken nuggets are very popular recipe to all kids as well as all kinds of people. Today I prepare homemade chicken nuggets. Its looking same as shop and taste was fabulous. Also in this video I mention, how to preserve chicken nuggets and enjoy later. You can enjoy this easy crispy and homemade chicken nugget at lunch box or at evening snacks or kids snacks item. This was amazing chicken recipe. Hope you and your kids, friends and family enjoy this chicken nuggets recipe. 

INGREDIENTS:

1.  1 cup chicken
2.  1 tsp ginger garlic paste
3.  ½ tsp red chili powder
4.  ½ tsp salt
5.  ½ tsp sugar
6.  1 tsp white pepper powder
7.  1/4th tsp baking powder
8.  1 tbsp corn flower
9.  1 tsp lemon juice
10.  1 egg
11.  1 tsp oyster sauce
12.  1 tsp tomato ketchup
13.  4 pieces bread
14.  ½ cup all purpose flour
15.  1 cup bread crumb
16.  Oil for deep fry

PROCEDURE:

1.  Take 4 pieces bread. Omit hard or brown part of bread with a knife. Don’t worry you can make bread crumb with this brown part using a grinder. Make little piece of brad. Then take a grinder. Put all bread pieces and grind. After grinding, take this in a plate.

2.  Take 1 cup washed boneless chicken. Pour chicken in grinder and grind properly. After grinding, keep blended chicken in a bowl.

3.  Now add 1 tsp ginger garlic paste, ½ tsp red chili powder, ½ tsp salt, ½ tsp sugar, 1 tsp white pepper powder, 1/4th tsp baking powder, 1 tbsp corn flower, 1 tsp lemon juice, 1 tbsp egg from a beaten egg, 1 tsp tomato ketchup and 1 tsp oyster sauce with chicken, Mix all. Now add grinded bread. Add bread and mix all. Make perfect dough. I add all grinded bread and make perfect dough. Lastly add 1tsp ghee with chicken dough. Mix all again. 

4.  Now take a chopping board, spread some all purpose flour and flat chicken dough with a knife or “beluni”. Make around 1/3rd inch thick. Now cut chicken like barfi or nugget shape. In this cutting process use a knife. Now take nugget pieces in a plate. Now let’s get ready to coat these nuggets.

5.  Take nugget pieces, firstly coat with all purpose flour, then brush with egg and then coat with red bread crumb both sides perfectly. Then place coated nugget in a plate. Same way coat all nuggets. You can refrigerate these nuggets in a zip lock bag or air tight box.

6.  Heat oil in a frying pan. Take nuggets and pour in hot oil. Fry nuggets in medium-low flame. 7-8 minutes later, flip all nuggets. Fry another sides for 5-7 minutes. That is, fry both sides of nuggets till golden brown colour.

7.  Then strain nuggets from oil with a sieve. Transfer nuggets in a plate with kitchen tissue to absorb extra oil. These chicken nuggets looking like same to same restaurant style or like as like shop. Now enjoy these chicken nuggets with any kind of ketchup or sauce. It’s flavor and taste was better than shop.

Today I prepare "Fuchka". Very common street or junk food. Now we are in lockdown situation, so street food is impossible to buy. So I make fuchka at home easily and obviously this is very hygienic. Follow my video and can prepare perfect mouthwatering fuchka. Here I take 1 cup amount maida suji dough, with 1 cup daal stuffing and 1 cup tamarind tok gravy. With these you can serve 4-5 person easily...So do it hurry and let me know your precious feedback...

INGREDIENTS FOR “TETULER TOK”:

1.  3 tbsp tamarind
2.  1 cup hot water
3.  1 tsp “chotpotir masala”
4.  1 tsp roasted cumin powder
5.  1 tsp red chili flakes
6.  ½ tsp salt
7.  ½ tsp rock salt
8.  2 tbsp sugar
9.  1 tsp chopped green chili
10.  1 tsp lemon-squash

INGREDIENTS FOR “DAAL STUFFING”:

1.  1 cup “chotpoti daal” or “dabli” boiled with 1 tsp salt
2.  1 boiled potato
3.  1 tbsp “Chotpotir masala”
4.  1 tsp red chili flakes
5.  ½ tsp salt
6.  1 tsp chopped green chili
7.  2 tbsp chopped onion
8.  1 tsp lemon-squash
9.  some chopped coriander leaves

INGREDIENTS FOR “FUCHKA DOUGH”:

1.  ½ cup maida or all purpose flour
2.  ½ cup semolina or suji
3.  ½ tsp baking soda
4.  1 tsp oil
5.  Enough oil for fry

PROCEDURE:

1.  Take 1 cup “chotpoti daal” or “dabli”, this daal was soaked with water for overnight. Then I washed this. Now let’s boil daal. So add 1 tsp salt with “chotpotir daal”. Then place pan in a stove with high flame. Stir once. And then cover pan in medium flame for 1 hour or till daal sodden properly.

2.  Now make a dough for fuchka. Take a bowl, add ½ cup maida or all purpose flour, ½ cup semolina or suji, ½ tsp baking soda and 1 tsp oil. Mix all and make this maida suji mixture “jhura jhura”. Here I didn’t use any salt to make dough, because using salt with dough, fuchka will not crispy. So don’t use salt with fuchka dough. Now add mild hot water gently. Add water and mix. Make soft dough. Knead well. Soft dough is ready, here I need around less then ½ cup of water. Cover with a plate and keep aside for 30 minutes.

3.  Now we make tamarind tok for fuchka. Here I took 3 tbsp tamarind soak with 1 cup hot water for 1 hour. Tamarind already getting soft. Now squeezing tamarind seed from its pulp. Here I doing this with my hand, you can use strainer to separate this tamarind pulp. If pulp is very thick, can add some more water. My tamarind pulp thickness is perfect.

4.  Now add 1 tsp “chotpotir masala”, 1 tsp roasted cumin powder, 1 tsp red chili flakes, ½ tsp salt, ½ tsp rock salt, 2 tbsp sugar, 1 tsp chopped green chili and 1 tsp lemon-squash. Mix all properly. You can taste this, if needed add salt sugar or spice. It depends on your taste. So “Tetuler Tok” is redy for “Fuchka”.

5.  Take sodden “chotpotir daal”. I take 1 cup sodden daal with its water. Take 1 boiled potato, mash this and add with boiled daal. But not over mash this potato. Now add 1 tbsp “Chotpotir masala”, 1 tsp red chili flakes, ½ tsp salt, 1 tsp chopped green chili, 2 tbsp chopped onion, 1 tsp lemon-squash and some chopped coriander leaves. Mix all properly. Chili depends on your taste. You can add some more or less. Salt add very carefully, because daal already sodden with salt and chotpotir masala already contains salt. So daal stuffing for fuchka is ready.

6.  Take maida suji dough. Knead well. For 2-3 minutes, knead and make soft. Make 4-5 balls. Now take a ball, knead again. Make this like thin rooti. Rooti should not make so thin or thick. Take a small size glass or any round shape cutter for making fuchka shape. Like video cut rotti for fuchka and place in a tray. Same way, make others rooti. 

7.  Heat enough oil in a frying pan. Pour fistly on fuchka rooti. See every fuchka getting fluffy. Keep flame high in frying time. Flip all fuchka. Stir and flip gently. Fry till golden brown colour. Then strain fuchka from oil and transfer in a jhuri.  Same way fry rest of fuchka.

8.  Now let’s make a plate for fuchka like shop or street style. Take a fuchka, make a hole, gently pour daal stuffing with a spoon and place in a plate. Stuffing amount add of your choice. In middle, place “tetuler tok”. Now spread some chopped onion, chopped coriander leaves and grate boiled egg top of fuchka. So the perfect fuchka plate is ready to serve. This is so amazing. And this homemade fuchka taste is better than street or any kind of hotel restaurant.

Today I prepare yummy chicken ball recipe in cp style. Cp chicken ball is very popular item in our country. So I made this cp style chicken ball, which is looking like same cp shop. This does not need so many ingredients, so you can make this chicken ball at home very easily and in short time. Hope you will enjoy this yummy chicken ball snacks video and can easily prepare chicken balls. So enjoy with your family and friends. Stay safe.

INGREDIENTS:
1.  1 cup chicken keema or chicken mince
2.  3 bread (water soaked)
3.  1 tsp ginger garlic paste
4.  Some coriander leaves, 4-5 piece green chili, 2 dry red chili
5.  1 tsp salt
6.  ½ tsp tasting salt
7.  1 tsp tomato ketchup
8.  1 tsp crushed black pepper
9.  1 tsp soya sauce
10.  Oil for fry

PROCEDURE:

1.  Take a grinder, squeeze water from bread like video and place in grinder. Here I remove hard part of bread with a knife. Already my chicken keema is blended, so I grind or blend bread with chili and coriander leaves. But if you take boneless chicken pieces, then with bread also grind chicken. Add coriander leaves, green chili and red chili. Cover jar and make a smooth paste.
2.  Take blended bread with chili coriander. Add this paste with chicken keema. Then add ginger garlic paste, soya sauce, crushed black pepper, tasting salt, salt and tomato ketchup with chicken keema. Now mix all properly. After mixing, keep this in refrigerator for 30 minutes to marinate nicely.
3.  30 minutes later, brush some oil of your two hand palm. Take some chicken dough, make small size balls and place in a plate. Same way make all chicken balls. 
4.  Heat enough water in a pan. Boil nicely. Now add all chicken balls in hot water. Keep flame high. Simmer chicken balls for 4-5 minutes. While chicken balls ready to float, you have to understand that chicken cook perfectly. Stir once. 
5.  Chicken balls are floating, so drain chicken balls from water with a strain. Soak extra water with a kitchen towel. Now cool these chicken balls. If you want to preserve these chicken balls, then cool perfectly and keep in air tight box or bag. And then keep in deep freeze. When you will need. Just shallow fry chicken balls and enjoy.
6.  Heat oil in a frying pan. Add chicken balls. Keep flame in medium-high. Stir chicken balls. Fry all sides of chicken balls like light golden colour. Because chicken balls already cooked properly. This frying gives chicken balls colour like CP or other restaurant style. Chicken balls are done. Drain chicken balls from oil and transfer in a plate with tissue.
7.  Now take some stick. Stick chicken balls like video. This is looking so gorgeous like Cp shop chicken balls. Serve and enjoy with tomato ketchup.

Today I will share with you a shahi pulao recipe named “Shahi Najar Pulao”. This pulao recipe is inspired by “Siddika Kabir” cooking show. This pulao is a perfect recipe for upcoming Eid. So attractive and yummy pulao. I hope you will enjoy this video recipe. Share this recipe and video with your friends and family. Stay safe and happy cooking.

INGREDIENTS:

1.  2 cup kalijira pulao rice (washed & water soaked)
2.  1/4th cup chopped onion
3.  ½ cup yogurt
4.  3 cinnamon, 3 cardamom
5.  1 tbsp sugar
6.  Some raisins or kismis
7.  1/4th cup chopped / grated carrot
8.  2 tsp ginger paste
9.  Pinch of jafran
10.  1/4th cup ghee
11.  Salt depends on taste
12.  2 tbsp crushed pistachio nuts
13.  5-6 piece green chili
14.  2 or 3 drop orange food colour
15.  1 tsp keora water

PROCEDURE:

1.  Take a cooking pan. Add and heat ghee. Add some chopped onion to make beresta or fried onion. Stir and mix with ghee.  Turn Onion golden brown colour. Then transfer beresta in a plate.

2.  Now cook rice with the rest of ghee. Add washed pulao rice, cinnamon & cardamom and salt. Mix nicely with rice. Today Pulao cooked in ghee. Then add ginger paste. Stir and mix with rice nicely. In medium flame, fry rice till rice getting white colour. And a nice aroma will spread everywhere.

3.  Now add 4 cup hot water. Rice 2 cup, so water 4 cup. Water is needed double than rice for pulao, khichuri, tehari or Biryani. Stir and mix with rice. Boil properly in high flame.

4.  Then add yogurt. Mix with pulao. Now boil rice perfectly. This will take around 5-7 minute. Keep flame high in this time.

5.  Rice almost risen level of water. Stir and mix. Taste amount of salt, if needed add more. Add green chili, pinch of jafran, sugar and 2 tbsp chopped onion. Mix all properly. Cover pan in low flame for 20 minutes. If you want, you can put this pan on a tawa and keep into “DOM”.

6.  20 minutes later, open the lid. Before stirring, add raisins, chopped carrot, crushed pistachio nuts and some beresta. Stir and mix with pulao. Shahi Pulao almost done. Put off the flame.

7.  At last add drop of food colour like video and 1 tsp keora water. Cover pan for 5 minutes and then serve in a bowl. So My “Shahi Nazar Pulao” is done. I decorate pulao with a boiled egg and some beresta. This “shahi nazar pulao” not only looking so attractive but also taste is very yummy and delicious.
