#Winter Vegetable Khichuri #শীতকালীন সবজির খিচুড়ি #Easy Recipe
1. 1 cup pulao rice
2. 1 cup lentils or daal (moosuri + moong)
3. 1/3 rd cup cooking oil
4. 4-5 cinnamon, 4-5 cardamom, 2 bay leaves, 4-5 cloves
5. 1/2 cup chopped onion
6. 1 tbsp garlic paste
7. 1 tbsp ginger paste
8. 1 tsp turmeric powder
9. 1 tsp red chilli powder
10. 1 tsp coriander powder
11. Salt depends on taste
12. Colourful vegetables ( 1/2 cup cauliflowers, 1 tomato, 1 potato, 1/3rd cup beans, 1/3 rd cup carrots) cut in cube shape
13. Some onion leaves
14. 4 cup hot water
15. 5-6 piece green chili
16. 1 tbsp ghee
1. Heat oil in a pan. Add cardamom, cinnamon, cloves and bay leaves. Stir and fry for a few seconds.
2. Add chopped onion. Stir and fry for a minute. Add all vegetables, Here I take cauliflower, green beans, carrot, tomato and potatoes. All vegetables cut in cube size. You can add any other vegetables or shaak. Mix all together.
3. Add garlic paste, ginger paste, turmeric powder, red chilli powder, salt and coriander powder. Mix with vegetables. Cover and cook vegetables for 2-3 minutes in high flame.
4. 3-4 minutes later, open lid. Stir all. Now add washed rice and daal. Here I take 2 cup rice and daal. Daal is two kinds, moong and moosuri. Mix with vegetables. Meanwhile add some onion leaves. After frying all things, add 4 cup hot water. Rice, daal 2 cup, so add double amount water (4 cup). Mix all. In high flame, cover pan for a few minutes to boil perfectly. Open lud after boiling. Add some green chili, check salt and mix. When rice and daal turn to same with water, cover pan for 20 minutes in low flame.
5. 20 minutes later, open lid. Stir carefully. Khichuri almost done. Chaal, daal and vegetables cooked nicely. Add ghee for nice aroma. Mix again and cover pan until serve.
